All Boulanger Artisan Bakery ingredients are organic and also locally sourced where possible

Flour - Organic white and biodynamic wholemeal wheat flour and rye flour from UK-grown grain from Shipton Mill in Gloucestershire. We will soon be using locally grown and milled grain.

Yeast - Bioreal organic yeast from Shipton Mill.

Salt - Sicilian artisanal salt from Suma Wholefoods Cooperative in Elland, West Yorkshire.

Dairy products - Organic butter from Calon Wen Dairy Cooperative in Narberth, Pembrokeshire. Organic milk from Teme Dairy.

Eggs - Organic free-range, welsh eggs from Ystwyth Valley.

Dry goods - Most of our organic raisins, sugar, spices, seeds, nuts, etc come from Suma Wholefoods and Mintons Good Food in Llandrindod Wells.

Wholemeal tin – wholemeal wheat flour (60%), stoneground white wheat flour (40%), salt, yeast, pumpkin, sunflower, sesame, poppy and linseed

White tin – white wheat flour (100%), salt, yeast

Baguette – white wheat flour (93%), rye flour (7%), salt, yeast

Ciabatta – white wheat flour (100%), salt, yeast, olive oil

Semi-rye sourdough – rye flour (50%), stoneground white wheat flour (50%), salt, yeast, pumpkin, sunflower seeds

100% rye sourdough – rye flour, pumpkin, sunflower, sesame, poppy and linseed, salt

Sourdough pain de campagne – white wheat flour (67%), wholemeal wheat flour (33%), salt

Five grain sourdough – white wheat flour (75%),wholemeal wheat flour (25%), oats, sunflower, sesame, flax and poppy seeds, salt

Gluten Free Seeded Loaf – gluten-free bread flour (teff and sorghum), egg white, linseed, sunflower seed, apple cider vinegar, psyllium husk, sugar, yeast, salt, sesame seed

Croissant – white wheat flour, milk, butter, salt, yeast

Pain au chocolat – croissant dough (white wheat flour, milk, butter, salt, yeast) plus Montezuma’s dark chocolate and sugar

Pain aux raisins – croissant dough (white wheat flour, milk, butter, salt, yeast) plus custard (milk, eggs, sugar, cornflour, vanilla essence) and sultanas

Almond Croissant - croissant dough (white wheat flour, milk, butter, salt, yeast) plus almond paste (butter, sugar, eggs and ground almonds) topped with flaked almonds and icing sugar

Seasonal Fruit Square - croissant dough (white wheat flour, milk, butter, salt, yeast), almond paste (butter, sugar, eggs and ground almonds) and whatever fruit is in season
